Caciocavallo: Caciocavallo is a generic name for a spun cheese from southern Italy.
Etymology and distribution: The name derives from the Latin caseus (cheese) caballus (horse), cheese on horseback. This etymology comes from the technique of refining the product, attached by two "pears", astride a horizontal support. Hence the word, and the product itself, have spread widely in gastronomies:
