Dunand: "Dunand" is the surname of two cooks of Swiss origin (we also find the spellings Dunan and Dunant). The father directed the kitchens of the Prince of Condé. His son inherited the office and followed the prince into exile in 1793. He returned to France twelve years later and entered the service of Napoleon I. He is credited with the invention of the Marengo chicken, but the victory of the French over the Austrians took place in 1800, and Dunand remained in the service of the Prince of Condé until 1805.
