Favre (Joseph) : Joseph Favre est un chef cuisinier d'origine suisse (Vex, Valais 1849 - Paris 1903). Après avoir fait son apprentissage dans son pays natal, il vint à Paris, chez Chevet, pour se perfectionner, puis il exerça en Allemagne et en Angleterre, avant de revenir à Paris, chez Bignon. Il est surtout connu comme théoricien de la cuisine française et s'attacha à sa démocratisation.
