Jouanne: “Jouanne” was a Parisian restaurant founded in 1823, near the meat market and the triperie, in the old district of Les Halles in Paris. He was famous for his Caen-style guts, like his neighbor Pharamond (*). Jouanne emigrated in 1891 to the avenue de Clichy, and his customers followed him, also attracted by the Breton leg of lamb, a leg of lamb spiked with garlic, served with white beans in lard and tomato sauce.
