Vineuse (marinade): Vineuse is a Burgundy marinade made from oxtail, onions, carrots and seasoning. The vineuse marinates for a day, then it is moistened with stew broth and bones from this stew are also added.
Reduced for an additional day, it becomes a sauce used to make the base of poached eggs and other culinary preparations known as “Burgundy style”.
