Sodium benzoate: Sodium benzoate, with the chemical formula (Na+ + C6H5COO-)(NaC6H5COO) is the sodium salt of benzoic acid, known as E211 as a food additive. Soluble at the rate of 640 parts per 1000 of water at 25°C. It precipitates in the presence of a concentrated acid (eg concentrated sulfuric acid) giving benzoic acid (very slightly soluble in water) whose melting point can be analyzed more easily. Its aqueous dissolution causes an increase in pH.
