To simmer: v.tr. “Simmering” originally meant gently and long cooking slices of stale country bread in a soup or broth.
The bread thus absorbs the liquid and the soup becomes more consistent.
"Mitonner" comes from miton, "loaf of bread" in the dialect of western France.
By extension, the word has become synonymous with "simmer", and it is even used in the sense of meticulously preparing a home cooking dish.
