Menu-droit: A menu-droit is, in classic cuisine, a strip 2 centimeters wide by the same thickness, cut from a poultry fillet (chicken, pullet or turkey). Previously marinated in double cream, the straight menus are then grilled for two minutes on each side and served with lemon juice and browned butter, or simmered for a few minutes in a sauce for poultry.
