Plucking: v.tr. “Pluming” means removing the feathers from poultry (or game birds). We proceed by going up from the tail towards the head and with care, so as not to tear the skin. Feathering is easier if the bird, especially if it is small, has been put in the refrigerator to firm up the flesh; the buckling then makes the down disappear. As for the small feather "tubes" that still resist, they are removed with the tip of a paring knife....
