Sautoir: nm A sautoir is a low saucepan, fitted with a handle or two handles, commonly called a “sauté dish”. The jumper has vertical, low edges, and can receive a lid. In aluminium, stainless steel or internally tinned copper, often with a non-stick coating, it is used to prepare sautéed meat, poultry or fish, the cooking of which continues covered, sometimes in the oven.
