Lengthen: v.tr. "Lengthening" means adding a liquid (water, stock, wine, broth, etc.) to a preparation that is too thick or too reduced, to a short (concentrated) sauce. The operation makes it more fluid, but reduces the flavor (for example: lengthen a bechamel sauce with milk).
The term “lengthening” also designates the action during which the baker gives the dough piece its final length. It is made manually or using a moulder.
