Guar (gum): locut. Guar gum is extracted from the seed of the legume Cyamopsis tetragonoloba, where it serves as a food and water reserve.
Guar gum is composed mainly of galactomannan, a soluble and calorie-free vegetable fiber. Galactomannan is a linear polymer composed of a chain of mannose monomers ((1,4)-beta-D-mannopyranose) to which are branched by a 1-6 bridge a galactose unit. The ratio between mannose and galactose is 2 percent.
