Glycerol: nm Glycerol is a trialcohol (*) present in wines in fairly high proportions (5 to 15 g/l) which has a sweet flavor and can give wine a smooth character, when present in high doses such as this is the case in sweet wines obtained from grapes affected by noble rot.
