Frying: “Frying” means cooking a food, or finishing its cooking, by immersing it in a fatty substance brought to a high temperature. This method of cooking, carried out at the last moment, applies above all to small raw or cooked pieces, carefully sponged and dried.
The food is often coated in flour, bread crumbs, batter, pancake batter, choux pastry, etc., which gives it a nice colored crust.
