Finish: v. tr. “To finish” is to finish a preparation with a final fine-tuning of the seasoning, consistency, decoration, etc. Some soups are finished by adding sprigs of chervil, fresh butter and fresh cream.

A dish topped with Mornay sauce is "finished" with a glaze under the grill....
