Fatty acid desaturase: A fatty acid desaturase is an oxidoreductase introducing, by dehydrogenation, a C=C double bond into the carbon chain of a fatty acid. These enzymes are mainly designated by the "delta" position of the carbon atom concerned by the desaturation, and located closest to the end of the chain comprising a hydroxyl group. There are also distinct "omega-3 desaturases" present in certain organisms.
