Blood drop (cooking): Blood drop cooking is a cooking technique for small birds (partridges, pigeons, etc.) in the blood drop oven, i.e. about 15 to 20 minutes at 180°.
They must then be left to rest so that the flesh relaxes and expresses the drop of blood.
Kidneys of veal or lamb can also be cooked "au drop de sang".
