Deactivated yeast: Baker's yeast is a unicellular fungus of the genus Saccharomyces and species cerevisiae.
The deactivation, by heat treatment, of the baker's yeast causes it to burst and release its cellular contents, including glutathione. Glutathione is a tri-peptide made up of glycine, cysteine and glutamate. Deactivated yeast is used as a basic component in food products, improvers and bread mixes.
