Cover: v.tr. "To cover" is to put a lid on a container when the preparation must be covered. For some vegetables (cauliflower, for example), the lid can be replaced by parchment paper, buttered or not. This also prevents the preparations from drying out and forming a skin during cooling (on a pastry cream, for example). Certain preparations (stews, pâtés, terrines) must be cooked in an airtight container.
