Cinnamic aldehyde: Cinnamic aldehyde or cinnamaldehyde (more precisely trans-cinnamaldehyde) or 3-phenylpropenal is an organic compound of the phenylpropanoid family, with the formula C9H8O. It is an example of a fragrant aldehyde.
It is the main aromatic component (90%) of cinnamon essence and is found naturally in the trunk of the Vietnamese cinnamon tree, the camphor tree and the Chinese cinnamon tree (Casse).
