Barder: v.tr. "Barder" is to cover with a thin strip of bacon (bard) a piece of meat, poultry, game, sometimes even a large
fish to be braised, to prevent the piece from drying out during cooking.
The bard is held together by string which is most often removed after cooking except for roasted game.
