Aldehyde is an organic compound in which a carbon atom is bonded by a double bond to an oxygen atom and a hydrogen atom. Aldehydes are used to impart odor to certain food products; Acetaldehyde, or ethanol, discovered in 1774 by Swedish chemist Carl Wilhelm Scheele, has a characteristic green apple smell.
