Acetoin: Acetoin or 3-hydroxybutanone is an organic compound, a hydroxylated ketone, with the formula C4H8O2. It comes in a colorless liquid form, or a yellow to pale green color, with a pleasant smell reminiscent of butter.
It is an intermediate during the fermentation of butane-2,3-diol in Enterobacteriaceae. 3-hydroxybutanone can be demonstrated by the Voges-Proskauer reaction.
