Yuca: “Yuca” is the Spanish word meaning “cassava”. (See Cassava). Cassava is a shrub from the tropics (Euphorbiaceae family), the root of which provides a food starch, tapioca.
In Mexico and some Central American countries such as Nicaragua, yuca roots are used in the composition of certain vegetable dishes as an accompaniment to meat, such as vaho.
