Woodruff : nf Woodruff is a looking plants (family of Rubiaceae - Botanical name: Asperula odorata L.), in the undergrowth of northern and eastern Europe. Very fragrant once cut hence its namesmelly asp rule. The plants is also called Fragrant Bedstraw, Little Muguet or Reine-des-bois and more rarely Swiss Tea or Belle-étoile.
En Food et pastry, we use it for flavor of mousses, creams, Charlotte. Woodruff has also been used for a long time to flavor of drinks.
The “Maitrank”, wine traditional from the east (Germany, Belgium, Luxembourg, Switzerland) is obtained by maceration woodruff in White wine.
