Arborio (rice): locut. Arborio rice is an Italian variety (a cultivar) of rice (Poaceae family - Botanical name: Oryza sativa), widely used for the preparation of Italian risotto. It owes its name to the town of Arborio, in the Po Valley, where it was selected.
Arborio is a round white rice. It is considered one of the finest rices because it absorbs a lot of cooking liquid without too softening.
