Pseudo-cereals: Pseudo-cereals are dicotyledonous plants whose seeds are eaten more or less like cereals. Unlike true cereals, they are not Poaceae (or formerly Grasses). Their grains can be ground and reduced to flour and used like those of cereals. Some can be made into bread (amaranthe, foxtail amaranth), others not, due to insufficient gluten content and quality (quinoa, bread nuts).
