Pomegranate molasses is made from the juice of a certain highly acidic pomegranate variety. Added with sucre and lemon juice, this juice is reduced until a thick and very dark syrup is obtained (not to be confused with grenadine syrup made from Red fruits) and which keeps for a very long time. They are quite easily found in Middle Eastern grocery stores. Due to its acidic, sweet and fruity flavor, pomegranate molasses can be used as balsamic vinegar : to make a vinaigrette, to mariner of the meat or fish (par exemple avant d’en faire des brochettes), pour faire une sauce caramelized, etc.
If its astringent side is sometimes annoying, it is possible to soften it by mixing it with miel.
In Iran, pomegranate molasses is widely used, particularly in an emblematic dish of Persian cuisine, stew de chicken with sauce noix et grenade (khoresh-e fesenjan ba jujeh).
In Türkiye, it is part of the composition of nirbach. This molasses can also be used to make a refreshing drink by diluting it in lemon water (one tablespoon for one liter of lemonade).
