Coco bean from Pamiers: In the Ariège valley, a particular bean (Fabaceae family) is produced, called “coco de Pamiers”. It is a small, slightly round bean which, although present for a long time, had been supplanted by the ingot.
Brought up to date by a few enthusiasts, who subsequently created an association, we can once again appreciate its delicate flavor in mongetada (or mounjetado in langue d'oc), the local cassoulet.
