Mallemort (asparagus): Mallemort's asparagus is a monocotyledonous plant (Liliaceae family), herbaceous, perennial, whose claw each year produces buds that grow into fleshy stems (spears) that are eaten cooked ( asparagus tips) and the edible stem.
The best white asparagus is in Lauris and Pertuis but the best green asparagus is harvested in Mallemort, a small town located in the Bouches du Rhône department in the south of France.
