Hominy: Hominy (also called nixtamal) is a South American product consisting of corn kernels dried on the cob and shelled, then treated with an alkaline solution (lessi) of baking soda, lime and of wood ash, which softens the envelope. This is then removed, and the grain degermed.
The inside of the grain is dried; it then looks like popcorn (cornflakes) with a softer consistency (large corn grits).
