Green vegetables: We group together under the name green vegetable or fresh vegetable.
Terminology: Green does not mean here of green color but fresh as shown, for example, asparagus, eggplant, carrot or beetroot, and green vegetable is opposed to dried vegetable and starchy vegetable.
The pea, although green in color, is considered a dried vegetable.
Avocado is more of an oilseed than a green vegetable.
The expression green vegetable is similar to the Italian verdura.
