Bonne dame: nf Bonne dame is a wild plant (family Chenopodiaceae - Botanical name: Atriplex hortensis L.), also called orache, orache, love cabbage or foulette.
We use the good lady in vegetables such as spinach or in soup. In sauce, like sorrel with cream, to accompany a salmon fillet. The red variety colors the cream pink and gives a nice effect to the dish.
