Belboula: Belboula (or al balboula) is white barley with which we make couscous semolina (instead of durum wheat semolina). Belboula is mainly consumed in North Africa and especially in Morocco, where it is highly appreciated in the countryside (bled). It is an invigorating and energetic couscous especially intended for the people of the fields.
It is also made into a thick soup which is prepared especially at the time of Ramadan.
