- white wines: Acidity: green, acerbic, acid, nervous, lively, fresh, flat. Soft: tender, supple, fatty, soft, pasty
- red wines: Acidity: acid, lively, fresh. Soft: supple, melted, fleshy, fat, unctuous.
- tannin: firm, solid, structured, tannic, bitter, rough....
