Soften: v. tr. "To sweeten" is to reduce the pungency, bitterness, sourness, bitterness, acidity or excess seasoning of a dish either by prolonging the cooking or by adding water, milk, broth, fresh cream. A pinch of sugar sweetens the crushed tomato. A sauce is sweetened by boiling the wine used for deglazing and imposing a reduction on it.
