Rancio: nm The rancio aroma is said of a wine that has undergone oxidative aging (synonym: maderized). This controlled oxidation sought by the producer or the breeder is different from the accidental oxidation which breaks a wine. The slow and prolonged action of oxygen modifies the molecules of the wine. The fruitiness tends towards aromas of dried fruits (nuts, almonds, figs, raisins...).
"Cooked" aromas appear: roasting, cocoa... The color changes. A white wine darkens towards the back...
