Train: v. tr. "To form" is to give its final shape to a preparation, possibly before cooking. You can form a leavened dough before putting it in a mould, form a preparation of fish, meat or other, whether stuffed, breaded or masked, before cooking it. "To form" is also used when a sponge cake or an emulsified sauce forms the ribbon, indicating that one is ready to be put in a mold and that the other is at the end of cooking....
