Extraction: noun Extraction is an operation which consists in extracting the aromas and tannins contained both in the stems and in the grape berries.
- Solvent extraction: Extraction carried out using volatile organic solvents in devices called Soxhlet extractor.
- Supercritical CO2 extraction: Extraction technique based on supercritical CO2 as a solvent.
