Zalouk: Zalouk (zaalouka or zaalouk) is a kind of cold ratatouille served as an appetizer with other salads typical of the Maghreb.
It is composed of grilled eggplants, cooled in cling film, then peeled and mixed with tomato, crushed garlic cloves, flat-leaf parsley, chopped coriander and olive oil.
