Xingar (Basque cuisine): Xingar is a traditional bacon from the Basques. These are thin slices of pork preserved by curing. The xingar can be cut in ham or in bacon (belly). It is eaten fried in a pan.
Produced from pork slaughtered in winter homes, occasionally urde hiltzea (*) or “pelère”, it plays an important role in the family economy.
