Viroflay: “Viroflay” is, in classic cuisine, the name of a spinach preparation. These are subrics (See Subric) made from mashed spinach, wrapped in blanched leaves, then topped with Mornay sauce and au gratin in the oven.
Spinach subrics are also included in the Viroflay garnish for large roasted cuts of meat, sauced with juice, with quarters of sautéed artichoke bottoms and château potatoes.
