Poulamon (fish) : The tomcod is a small sea fish, of the Gadidae family, but which, in Quebec, goes up the course of the St. Lawrence in winter to spawn. This time is the occasion for popular celebrations, especially in Sainte-Anne-de-la-Pérade: as soon as the ice is set, hundreds of small huts are erected on the river to fish for tomcod, also called "little fish of the channels”. Tomcod is best prepared for frying.
