Surprise (butchery): The surprise is a (small and therefore rare) butcher's piece such as a pear, spider or whiting. This is the only pan-fried part of the beef shoulder, located above the chuck.
It has a tenderness and flavor highly sought after by connoisseurs, as tender as fillet and tasty as rib steak. It must be left to “go rancid” in oil (vacuumed) for at least two weeks before searing it over high heat.
