Spoon (à la): The expression "with a spoon" (or "with a spoon") is used for meats (lamb or suckling pig for example) which have been cooked (candied) for a long time, between four and eight hours, in a medium oven (160 ° C) and whose texture is such that you can eat them with a spoon instead of cutting them.
