Spanish (sauce): The Spanish sauce (or brown sauce) is a sauce of French origin which serves as the basis for many other sauces and in particular after reduction, in the form of demi-glace.
It is made from a basic sauce composed of a brown roux and a brown base, flavored with fresh tomato and mushroom trimmings; we add a mirepoix, mainly based on carrots, onions, thyme and bay leaf.
