Sherry (vinegar): Sherry vinegar (Spanish: vinagre de jerez) is a vinegar produced from sherry wines. The aging system is identical to that of sherry wine (solera). The vinegar stays in barrels for a minimum of six months. The “Sherry reserva” vinegar appellation requires an aging period of at least two years. Like wine, Grands Crus age up to 20 to 30 years and even 80 years.
