Schoolboy : The escolar is a marine fish of the Gempylidae family, reaching 2 meters and 45 kilos of uniform dark brown color becoming black with age. Living in depth between 200 and 900 m, the escolar comes to the surface at night. It is fished with a line in the tropical and temperate waters of the Atlantic and the Pacific, from the African coasts to Indonesia. The firm flesh of this carnivorous fish is white, oily, tender and chewy, rich in unsaturated fatty acids.
Its resistance to cooking is very good. It is marketed fresh as a loin, frozen, marinated as a cutlet. It is found made into fish cakes in Japan.
