Mayonnaise (sauce): Mayonnaise is a cold emulsified sauce made with egg yolk, mustard, vinegar, oil, salt and pepper. By doubling the quantity of mustard (before or after having emulsified in oil), it turns into a remoulade sauce.
History and origin of the mayonnaise sauce: Some attribute its invention to the Duke of Richelieu, who, having taken Port-Mahon, capital of the island of Menorca from the English and the Prussians on June 28, 1756, would have baptized "bad ..." .
