Riviera (pastry): The riviera is a cake created by the French pastry chef Lucien Peltier. This fresh and colorful summer pastry combines lime mousse and raspberry mousse, separated by a sponge cake, on an almond biscuit base.
The riviera is decorated with pieces of crushed pistachios or lime and strawberries or raspberries.
